Behind The Pass with Henrique Sá Pessoa & Tom Booton
Portugal’s two Michelin-starred chef Henrique Sá Pessoa will be hosting his second Behind The Pass collaboration dinner on Wednesday 9th October at 7pm, welcoming highly acclaimed British chef Tom Booton from The Grill by Tom Booton at The Dorchester at JOIA restaurant, on the 15th floor.
The exclusive six-course dinner is £120pp and will feature three courses designed to share from each chef, starting with Henrique’s Portuguese interpretation of popular fish styles in the United Kingdom. Dishes include tuna tartare with red cabbage and seaweed, turbot with ‘pica pau’ fish veloute and monkfish rice with tomato, chill and coriander.
Tom’s dishes will follow, transforming his British classics with Portuguese inspiration, including squid bolognese with grated chourico, ‘All the Chicken’ with Iberian flavours, and fig leaf trifle inspired by Madeira.
